How to make banana brownies

  • Preheat the oven to 350ºF. Line a 8 x 8 ” baking dish with baking paper.
  • In a large bowl, combine the mashed bananas, eggs, coconut oil, nut butter and vanilla extract until fully combined.
  • Add the coconut flour, coconut sugar, baking soda, baking powder, cinnamon and sea salt to the wet ingredients and mix well. Fold in the chocolate chunks and chopped walnuts using a spatula. Reserve some of the chocolate chunks & chopped walnuts for later. 
  • Pour the batter into the prepared baking dish. Top with the reserved chocolate chunks and walnuts. Bake in the preheated oven for about 25 – 30 minutes. A toothpick inserted into the center should come out clean.
  • Remove from oven and allow to cool on a wire rack for about 10 minutes before cutting the brownies.

How long do they keep?

Once you have made your brownies, let them cool fully before transferring to an airtight container. They will keep well at room temperature for 3 to 4 days. You can store them in the fridge as well, but they will tend to harden a little.

Can you freeze them?

You can freeze brownies, but you must make sure to wrap them well in plastic and foil, before placing them into a freezer bag or air-tight container to protect them from freezer burn. Thaw them at room temperature for a couple of hours to enjoy.
