Blueberry Almond Crunch Baked Oatmeal

Great breakfast to have when you have a bit more time! It takes 30 minutes to bake, but its worth the wait! The oatmeal version of a blueberry crumble!  You could also swap out blueberries for any fruit that you like!

Blueberry Almond Crunch Baked Oatmeal

Makes 1 serving

Ingredients

1/2 cup old fashioned oats
1/4 cup blueberries (fresh or frozen)
8 almonds, ground up in blender or coffee grinder (or 2 Tbsp almond meal or flour)
1/4 tsp cinnamon
1/2 tsp almond extract
1/2 tsp vanilla extract
1/4 tsp baking powder
10-12 drops liquid stevia, or 1-2 packets
1/4 cup unsweetened almond milk (or milk of choice)
1/4 cup water
1/4 cup liquid carton egg whites (or 2 egg whites)

Directions

Preheat oven to 375 degrees. Spray or grease a small baking bowl that can go in the oven.

In a small bowl, mix together ground almonds, cinnamon, vanilla, almond extract, and stevia. It will form into a paste.

In another bowl add in dry oats, almond milk, water, baking powder, egg whites & blueberries.

Transfer oat mixture to your oven proof bowl, and add in crumble mixture on top and gently stir it a little to combine.

Bake at 375 degrees for 30 minutes. When its done, it will spring on top and pull away from the dish, and be browned around the edges.
