Skip the Easter candy this year and pack those baskets full of homemade treats like these Bunny Tail Energy Bites and Vegan Peanut Butter Eggs.

I struggle so hard trying to find plant-based treats for Easter baskets, and in general, the idea of giving kids a ton of candy just doesn’t sit well with me.

What about this year, we switch it up and made some fun treats that you can actually feel good about giving??

The best part is that the kiddos will love them all the same because they’re 1) so damn cute and 2) incredibly delicious!

Ingredients and Substitutions

Unlike store-bought candy, these energy bites are a powerhouse of healthy wholesome ingredients that are naturally sweetened with dates and pure maple syrup. Let’s see what else!

Shredded Carrots – What’s a bunny tail treat without the addition of carrots, right? Just be sure to shred your carrots to quite small pieces. The last thing you want is a huge piece of carrot in your bite. Keep them small so they distribute evenly.

Oats – feel free to use gluten free oats here.

Chai Spice – if you don’t have chai spice on hand, you could use pumpkin pie spice or a blend of cinnamon, nutmeg, and clove.

Dates – I love sweetening energy bites and balls with dates. They act as both a sweetener and a binder. Just be sure to buy pitted dates!

Almond butter – If you’re unable to use almond butter, cashew butter would be your next best bet. I’d also try peanut butter or sunflower seed butter as alternatives.

Pecans – You could use walnuts in place of pecans here.

Maple syrup – be sure you’re using pure maple syrup and not pancake syrup that’s filled with additional sugar and high fructose corn syrup.

Vegan White Chocolate Chips – I love Enjoy Life’s White Chocolate Chips because they are plant-based and free from the top 8 allergens. They are sweetened with cane sugar and use pure vanilla.

Shredded Coconut – I always use unsweetened shredded coconut in my baking so I can control the sweetness elsewhere.

Step-by-Step Instructions for Bunny Tail Energy Bites

Step 1 – Place all energy bites ingredients in a food processor and pulse until combined.

Step 2 – Roll into 16 large or 32 small balls and place on a parchment-lined baking sheet.

Step 3 – Melt the white chocolate chips and coconut oil together in a small saucepan over low heat. Alternatively, heat in the microwave in a glass bowl in 15-second intervals until melted and smooth. Using a toothpick, dip each energy bite until the melted chocolate.

Step 4 – Roll the chocolate-dipped ball into shredded coconut.

Step 5 – Refrigerate until set.

To avoid sticky hands

If you find that the dough is sticking to your hands too much while rolling them, dampen your hands slightly before beginning to roll. Just be sure your hands aren’t too wet or that could affect the consistency of the dough. You may need to dampen again every few balls. This should help keep your hands cleaner and make it easier to roll.
