This Vegan French Toast recipe is a LONG time coming. Like I’ve been working on it for years.

My family loves breakfast, and I have had no problem whipping out vegan pancakes. I even tested my limits and wow’d my fam with vegan eggs that everyone just loved!

So I can do vegan breakfast.

But here’s the thing. My husband’s favorite breakfast food is French toast. And guess what vegan breakfast food I just couldn’t master? Yup.

It’s a rough one.

What to coat a bread with that will actually set up and not create a nasty soggy mess, cause gross.

I tried a pumpkin base.
I tried a banana base.
I tried a chia base.
I tried a flax base.
I tried no real base at all and just toasted bread… yeah that’s just toast my friends.

The majority of those options stuck to the pan and created a mushy grossness in the center that no one wanted to eat (but choked down because they love me and were hungry).

But then one lucky day, magic was created with the best vegan french toast EVER!

I actually tried out my friend Brita’s vegan french toast recipe and oh.em.gee we had a winner!

This is the best vegan french toast I've ever had.

I have since made her french toast no less than 15 times and tweaked the flavors a bit each time.

One of my absolute favorite flavor combos is the flavors of a chai latte.

  • ginger
  • cinnamon
  • nutmeg
  • clove
  • cardamon

It’s all just so heavenly and I had to pack all those flavors into my vegan french toast recipe!

There are definitely some things you need to know to be sure you get this recipe right so you don’t end up with soggy french toast that sticks to the pan.

Let me tell you exactly how easy it is to make the Best Vegan French Toast Recipe Ever!

  1. In a shallow dish, mix together ground flax and almond milk. Let sit for about 5 minutes to thicken up just a bit.
  2. Add your spices, cinnamon, nutmeg, espresso powder, ginger, clove, pepper, vanilla, and sea salt, and give it a good whisk.
  3. Heat a large non-stick skillet to medium heat and melt coconut oil to prevent french toast from sticking (yes, I take this precaution even on a nonstick skillet for this recipe).
  4. Now it’s time to dip your bread in the mix. (I’ll talk about what type of bread to use down below in the tips and questions). This part is very important, and you don’t want to mess it up. Be very quick about it. Do not let your bread soak up too much of the liquid. Just a quick dip for a second on each side and then right into the pan for 2-3 minutes on each side. You will know it’s ready to flip when it flips easily with no sticking.
  5. Place on a plate and cover with a towel while you finish cooking other pieces.
  6. Top with favorite toppings, such as whipped coconut cream, cinnamon, fresh fruit, maple syrup, nuts, etc.

When making this bread, I thought of a few tips that may help you avoid some of the questions you could potentially ask me. Such as:

Why is my french toast soggy? Is french toast supposed to be soggy inside?

Ok this has to do with what type of bread you’re using and how long you’re dipping it in the flax mixture.

So you want to be sure you’re picking a thick and crusty bread. I like a french bread, preferably day-old. Often though I haven’t thought about making french toast until the night before I want to make it. So I pick it up from the store and slice it up and then I just very loosely cover it on the counter overnight. That way it doesn’t get completely stale and crunchy but it starts to dry up a bit and will be perfect for the morning.

And then just make sure when you dip the bread in the flax mixture, you do so very quickly. You really just want the outer bit of the bread to be covered in the mixture, not so much the inside. It won’t get cooked and you’ll end up with mushy sogginess and no, that’s not what you want at all.

Can vegans eat french toast?

Traditional french toast is made with eggs and milk, so no, it is not suitable for a vegan diet. But this vegan french toast is 100% plant-based and perfect for vegans and omnivores alike!

Traditionally eggs, milk, bread, cinnamon, vanilla, and sometimes nutmeg. But in this case, we’re using a flax egg mixture instead.
