Like many, I’m just a wee bit obsessed with anything pumpkin this time of year. Tis’ the season, so off I went to Trader Joe’s (love that place!) to check out the pumpkin goodies. I had heard about their pumpkin yogurt, so I had to try it. Stats looked good, until I saw the sugar. 23 grams? What?! Say it ain’t so! Well, I bought a couple anyway in order to test them out and see if I could come up with a low sugar duplicate. Happy to say, after a few trials…I got it! They taste identical, and my version only has 5 g of sugar. YAY! Double pumpkin YAY!

Greek Pumpkin Yogurt

Makes 1 serving

Ingredients

3/4 cup non-fat greek yogurt
2 Tbsp pumpkin puree (I used canned pumpkin). Make sure its NOT pumpkin pie filling.
13 drops vanilla stevia (I used NuNaturals Vanilla stevia. Best tasting liquid stevia I’ve ever tried) *could also use approx 2 stevia packets to taste
1/8 tsp cinnamon
Pinch of each ground cloves, nutmeg & ginger

Directions

Mix together your greek yogurt and pumpkin with a spoon until blended. Add in your stevia drops and spices. Mix again. Return to fridge and let it set for 15 minutes. Stir and enjoy your delicious pumpkin creation, and relish in all the calories you’ve saved!

Thought I’d include a picture of what it looks like with the spices, and what a “pinch” looks like for me 🙂 The 1/8th tsp cinnamon is in the middle…above is the cloves and nutmeg below the cinnamon is the ginger.
